90 people coming over for dinner... brisket, turkey and short ribs

Hello Everyone,

Every summer I have a big brisket party. Last year's success is memorialized here:

Since my party gets more popular each year, I keep getting more toys. Two years ago I had the WSM 18.5. Last year I bought the 22.5. And this year I bought the Cajun Bandit BBQ Stacker ( http://cajunbandit.com/ ).

On the 22.5 I'll be doing:
-- 4 big, untrimmed briskets, 63 pounds. Midnight smoke planned, with burnt ends.
-- 3 large boneless turkey breasts, about 15 pounds, using Chris Lilly's method.

And on the 18.5 a friend of mine, who has placed in a competition, is doing the short ribs. 20 pounds.

Now all I can do is pray that Hurricane Isaac won't screw this up too much. I'm in Chicago, watching the weather radar like a hawk.

After the party I'll post pics and details.

Nothing like having 90 of your closest friends over for brisket! That's really neat. I hope you have time to take a lot of pictures.
