65 pounds of pork on the WSM?

Knowing I had this cook coming up, a number of weeks back I did an experiment. I made 2 pork butts side-by-side so I could run a taste test. Since Bad Byron's Butt Rub doesn't contain any sugar, I cut it 1:1 and went from there. The story goes like this...

Container on the left is full strength and the shaker on the right has the sugar

Wrapped & resting in the fridge for 12 hours

Unwrapped the butts and added another round of rub on the exposed side. After placing on the grate (fresh rubbed side down) I added more rub to the other side. The rub with the sugar has the temp probe.

With a few hours to go, tossed a pan of beans on the lower grate.

Problem is I had a handful of buddies here when it was time to pull. The butts got pulled on 2 separate platters so they could taste test each rub. Photos weren't taken until after they left and I was almost done with the clean up. Here's what's left just before hitting the fridge.

Final verdict ----- The rub with the sugar won all votes. The straight up Bad Byron rub was too salty. Still good, but salty. On the bright side, cutting it 1-to-1 with sugar will literally double the amount of rub I'll have.
 
Thanks Chad. I'm going to try this as well with my next PP cook, whenever that will be.

Those must have been some hungry friends if thats all thats left from 2 butts!
 
One thing to watch out for when doing this many. Try and be agressive trimming outside fat on the butts or you could end up with an ugly grease fire! There's plenty of internal fat to keep them juicy
