5 lb fattie question + pork butts

Planning on going to Sam's tonight to pick up the pork butts.

While I'm there, I planned on picking up a 5 lb. Jimmy Dean sausage roll.

Can I simply unwrap the whole log and throw it on the top rack above the butts? Should I break it into 5 smaller 1 lb. rolls?

My wood selection tends to be mostly pecan and a bit of hickory for the butts. Any need to worry about the smoke selection for the fattie?

The butts usually get rubbed in a blend of hot Hungarian paprika with some garlic powder and black pepper. Should I rub the fattie as well?

This meal all needs to come together at 7am on Monday for breakfast BBQ at work. All are invited.

I've never seen a 5 lb fattie. If you could post a picture I'd appreciate it. Got to see that thing.

I'll do that. I'm actually leaving work now for the store. Unless someone here offers up a valid reason why it would be a bad idea, the plan to smoke that 5 lb fatty whole.

Man, you're stealing my idea! I saw that 5 lb log o' pork at Sam's Club a few weeks ago and salivated at the thought of feeding an army a bunch of smoked breakfast sausage!

I'm heartbroken.

Sam's only had the 2 lb. rolls of Jimmy Dean.
The search function of this forum puzzles me. Before asking my original question about breaking up the 5 lb. roll, I did use the search function. I read a post by someone (excuse me for not remembering the name) who said they always bought the big 5 lb. package from Sam's. Now I cannot find that thread for the life of me.

I must be crazy.

Not only that, like Dan Wicker, I have seen the bigger packaging at the store, or so I thought.

There will be no photographs of 5 lb. fatties this weekend. I would if I could.

Can someone please verify that I'm not crazy, and that Sam's used to carry the 5 lb. package of Jimmy Dean.

I will not post a link on this forum which contains explicit language, but for a good laugh, please google Jimmy Dean 12 and listen to a consumer who's upset at the change in packaging. The caller is upset that Jimmy Dean changed from a 16 oz. package to a 12 oz. package, and he drops some F-bombs near the end of the recording. God bless Texas.

My wife and I plan to head up to Sam's today to get some Mother's Day flowers (they have great deals and super fresh flowers) for tomorrow. I'll see if I can snag a quick camera-picture of the monster log.

I just KNOW it's there..
 
Not sure if it was a 5 - maybe like a 3 pounder - but last summer, a neighbor bought some BIG fatties at Costco. You know - they sell the giant economy size of many products. They were Bob Evans brand...I'd done up some of the 16 oz versions in the past and he thought they were great.

When I unwrapped them, I noticed their texture was completely different than the 16 oz varieties. But I went ahead an smoked 'em anyway.

The end result: they were OK, but we all agreed that the smoother texture didn't lend itself to this process. He said had he know there was difference in the product, he'd never have bought them but stuck with the "regular" size.

Just wanted to share this.
 
Everything worked out great.

People who said they really don't care for the Jimmy Dean sausage were surprised how tasty they turn out once they've been smoked.

The 2 lbs. logs took about 3-1/2 hours at 225 degrees. I took them off at internal temp of 160.

The pork butt turned out great as well. 17 hours total cook time.

For the record, the butts were 1.68 / lb .
