5 Day Brine for Chicken

OK , it was a mistake , but it worked out fine!
Between 2 children coming home, a wedding I forgot about & a day of sleet & snow my bird I put in the brine for Fri was forgotten & cooked Tues nite.
Injected with 1/2 lb butter & 2 tsp Lawry's put in the roaster & pulled @ 160F , rested for 30 min & yum.
Not planned but didn't ruin anything . Sometimes it's better to be lucky than good

I give chickens at least 24 hours and turkeys atleast 48. But I see posters talk about shorter time because the don't want the bird to end up rubbery. I never get it. It looks like you have some evidence to show that longer brine work as well as shorter ones.
 
John what were the salt - water ratios in the brine. From what I've always been told if you brined it that long you should have been able to bounce it from the oven to the table.
 
my simple brine
1)1/4 cup kosher salt
2) 1/4 cup sugar
3) 1 qt water
I posted because i thought i'd ruined it. it wasn't perfect but still very good.
 
Interesting. I was always under the impression that a chicken would be an 8 hour soak in the brine. Sounds like there is plenty of room for discussion on that idea.
