4 overnighters

Put these on at 5:30pm and pulled at 11 this morning. This time of the year gets very busy for me BBQ wise, so I'm juggling a new VERY BUSY INTENSE job with my side BBQ biz..... Over the past month I've cooked 3 cases of butts on 2 WSMs (1 case will fit on 2 WSMs at a time) so I'm getting porked out. They cruised overnight with a slight breeze with temps in the mid 30's.

When I pulled the butts, I added more fuel and threw on 7 fatties (4 Maple and 3 Bold), also for customers.

Who are you cookin all the butts for? Food looks good, I wish I had one of those perfectly rolled fatties for breakfast this mornin.

The food is for customers...mainly coworkers and friends, which is enough as they keep me extremely busy around the Holidays. Here's a list of what I sell, but not limited to.


12-15lb Whole Smoked Turkey - $65
5-6lb Smoked Turkey Breast - $50
1lb Smoked Maple Fatty" - $10
1lb Smoked Spicy Fatty" - $10
2lb Beef Brisket (sliced) - $20
2lb Grilled London Broil -$25
2lb Slow Smoked Pulled pork - $20
Rack Baby Back Ribs - $20
Rack Spare Ribs - $20
2lb Pulled Chicken (sauced) - $24
2lb Pulled Beef - $20

Everything is vacuum sealed and frozen unless otherwise requested.
 
Those are the nicest looking fatties I think I've ever seen. I do a decent job, but those look so uniform and perfectly shaped.

I notice Larry has 2 probes into 2 different fatties, I guess he averages them or something...

Use those as guides....... I had pulled the first fatty off, then an hour and a half later pulled the other off. My thermapen took a dump on me so I used those two probes to monitor doneness. I have another instant read therm on the way, should be here Wednesday.

I was refering to their uniform shape and size. When i roll mine, they aren't quite so pretty.

Buy your favorite roll of Bob Evans or Jimmy Dean and take off the wrapper carefully. Roll in the rub of your choice and place on the WSM.
