Figured I'd share the results of my 3rd smoke, gets alot eaiser when you keep using the WSM. Ended up using Royal Oak which turned out to be briqs instead of lump (didnt read the bag) so cooked on those instead of Kingsford and I thought they lasted longer and didnt have as much ash.. also seemed to hold temps better but I could be completely making this up.
Anyhow, did ABTs and Ribs (2nd try)
First ribs I cooked on the WSM were a little under cooked and a bit tough so this round I went with 4 hours on, 2 hours foiled and 30 mins with sauce.. turned out extremely tender.. definitly overcooked but they were for the family and thats the way they like them. Think Im gonna try spares next time.
ABTs are amazing, my wifes new favorite snack.. lessened the blow of me buying another toy to add to my new BBQ smoking collection..
