was going to cook beef ribs on the top grate of the WSM! the wife has now invited more people over, so I will need another window of beef ribs! can I cook 2 large sets of ribs at the same time on the top & bottom racks, with the 3 2 1 method! or would I have to cook them longer? I have never used the bottom rack before!
thanks

I've cooked ribs, pork & beef using both racks. Once I did pork on top and beef on the bottom. The beef took a little longer of course. The lower rack does run a little hotter but not enough to worry about especially if you are foiling them.

Cook as usual.
Will take about the same time. :wsm:
Take pics and let us know how it went.
I'm doing beef ribs tomorrow also.

I did baby back pork ribs today and for the first time used the bottom rack as well and didn't notice a big difference in time.

I had other temp issues for some reason, but they all came out good
