2nd Butt - Injection just before, or day before?

I'm going to be doing my second butt tonight (three of them actually), prepping for a party of 50 people tomorrow afternoon.

Typically I rub my meat the night before my cook, to let it soak in for several hours. However in the injection recipe on the main site it looks like you do the injection just before lighting the WSM.

It's 1:30pm now, had planned to light the WSM tonight at around 10pm. Should I inject and rub it now and throw it in the fridge, or wait until later tonight? I can form arguments in my head for both, but the strongest one right now is that the injection might all run out if I do it now.

Secondly, thanks in advance for helping with my panicked requests for help later in in the night and into tomorrow morning if something goes awry. ;-) I always get such calm and sobering advice from you guys as I'm learning.

Cheers,
Pete

The injection will not all run out, some will, but will be fine. If you're really concerned, simply inject, rub and wrap in plastic wrap until you're ready to cook. When I inject, I just inject straight through the cryovac, through as few holes as possible through the plastic.

I'd also recommend shooting her up once you place her on the WSM. What I find is more injection stays in the butt (that sounds gross) on the WSM vs. injecting then picking-up and squeezing out the injection as you place her on the WSM. My .02

Thanks for the advice. I ended up injecting, putting the rub on, then lighting the WSM. I reserved some of the injection for use after the meat was put on the grill as well.

Will keep up to date on progress (and for those on twitter, I'm posting progress updates and pictures to twitter.com/pnear).

Pete
