I am going to be putting it together tomorrow & testing the use right out of box theory by after about 30 minutes of burn time. I will be smoking a couple of pork butts, fatties and chicken wings!!
You're going to love it! Pork butts are a very good test cook, and if the temps run a little hot the first time, the chicken wings will probably even benefit from it.
Went together in 15 mins this morning only problems heat shield was bent, gently bent back into shape & the handles didn't have screws but a quick trip to the junk box fixed that, after getting WSM to about 300 deg for about 30 mins adjusted vents to drop temp to 275 and put pork butts on just checked & after 3 hrs into cook WSM holding steady @ 275 ° temp on weber gauge.. temp probes read 264° @ bottom grate & 283° @ top vent very so far!!!
