I will be smoking for 50 people next week and the birthday boy has chosen smoked turkey. I have the 22.5" WSM, just not sure about the maximum amount of turkey I can get in this without overcooking or taking all day.
Dinner is at 5, so I am thinking if I get two 18 lb turkeys in at 1, then I should be good if I cook at 4 hours. Maybe even throw a couple of legs in just to make sure there is plenty of meat to go around.
Thoughts? Anyone ever attempt to cook this much turkey?
