I like spatchcocking and I agree with the following link regarding tying the legs.Gonna smoke my first turkey this November. My question is, should I spatchcock it or cook it with the legs tied? I love spatchcock chicken, but have never cooked a turkey. Thanks.
I am about half a month behind on this but I have to ask, have you ever seen a Norman Rockwell painting with a spatchcock bird in it? T bird has to be a whole bird.
Can I get more details about this cook? What temp and wood used?
325-350*. I used Apple wood for smoke.
