2013 Thanksgiving Turkey

Gonna smoke my first turkey this November. My question is, should I spatchcock it or cook it with the legs tied? I love spatchcock chicken, but have never cooked a turkey. Thanks.
 
I've done em both ways and while a spatchcocked bird cooks more evenly, a whole bird on the WSM is a thing of beauty. I would do it the way you like, but I would suggest you do a trial run before the big day.
This way you can experiment with rubs and smokewood if any.

spatchcocking a bird will help if you're going for a fast cook/grilling
for low n slow - just trussing the bird should do fine...

alternatively - get a rotisserie - truss the bird and it will be more moist than you can imagine

No spatchcock of Thanksgiving turkey, but apple wood make great turkey smoke, and gravy with a touch of
smoke if you save the drippings.
 
I don't tie, and if it comes with those stupid plastic hand-cuffs I toss those also.
Try some Alder, you can thank me later.

I am about half a month behind on this but I have to ask, have you ever seen a Norman Rockwell painting with a spatchcock bird in it? T bird has to be a whole bird.
