Here yall – Armadillo Eggs are just a texas name for whole cored jalapenos (not sliced in half) stuffed with any kind of cheese of your choice and sometimes even a crawfish or a half shrimp (sautéed in Cajun seasoning first), or a garlic clove, or chopped fried bacon, or anything else that will fit into the pepper cavity nestled in your cheese. cubed/chopped bbq leftovers go great in the peppers too. All wrapped in spicy breakfast sausage (your own or something like jimmy dean). bbq indirect for about 45mins-hour. use lots of wood chips, smoke flavor goes real good w these peppers. its probably not exclusive to texas but of course we gotta name it something that sounds like it is. heheh
