2011 WSM - 22.5 - Thermometer ?s

Hello everyone!

Excited to be here as a new member of the Weber WSM club! My 22.5 WSM just arrived a few hours ago and am planning for an overnight brisket smoke starting tomorrow evening!!!

THERMOMETER QUESTION-

Is there a general consensus regarding the (in)accuracy of the dome temp. gauge on the new WSM's. My Maverick ET-732 won't arrive until monday but I can't wait that long to smoke some brisket.

I have an accurate remote meet therm. but am concerned about maintaining an adequate ambient temp. and as a resut want to consider whether I can rely on the in-unit therm.
 
I know it's not yours but in regards to the 18", some read 10o higher than grate, some read 10o lower--when compared to the mav set up on the grate.

My dome is 10o lower than the grate. That goes contrary to what I think it should be (heat rises, right?) but it is what it is.

In your case, you could always split the difference

I think when all is said and done, the difference won't matter all that much.

I have an older model 18.5" WSM, so no experience with what Weber supplies on the bigger units. My gut says most of the thermos are fairly accurate; but that's no guarantee. You could always invest in a few bucks (literally) and buy a fry thermometer. A local store sells these things for $4. I drop them down the top vent. Check the fry thermo by testing it in boiling water for accuracy.

Agree with Paul, get a therm whether a stick or whatever and go by the vent. Or just keep in the 240-270 area on the factory therm and cook, it isn't that big of a deal I promise.
