Actually it was a 20lb roll split in two. Went on 'bout 7am. I thin I'm gonna pull one off @ 170* and cube it for future cooks like chili and what not. The other get pulled.
Just thought I'd share my day.

i love smoked chuck. i especially like the shredded chuck on nachos with queso,sour cream and extra jalapenos...mmmmm. i'm hungry.
 
Well I decided not to cube and just let them go.
I pulled the first one at about 11hrs in. I should have known better. I've done many of these but this one was stubborn as ****. Pulled it at around 200*. Probe went in like butter fork twisted with ease.. She rested for about 1 1/2 hrs then I pulled. The outside was wonderful, unfortunatly the further I went in the less rendering there was. Needless to say that part got chopped. It's cool though I usually chop some anyway to mix with the pulled. The second one is still going. Just reached 200* 13hrs in. She feels the same as the first, so I'm gonna let it go a little longer.

I love that planet! Beautiful work J. I was just thinking today that a smoked, cubed chuck would make some killer chili.
