Hello all,
1st time BBQ Beef ribs on the WSM. I found some beef ribs with a lot of meat on them, at the store yesterday, that I could not pass up, for $.99 per lb. Also, 1st time using Rancher's charcoal from Home Depot. Very happy with this brand. I will go back and buy a few more bags of this stuff. I put the ribs on at 10:00am, and they were done around 3:00pm. I used the Brickmann water pan, 2 chimneys of coals, and left all vents wide open for almost the entire cook. The temps got as high as $270, but came back down to $255 for most of the cook. The ribs were moist, tender, and the meat easily came off the bone. I was very happy with the results.
