Cooked first brisket for super bowl started it at midnight and pulled it during halftime and by the time it was ready to cut everyone was eating brisket instead of watching the 4th quarter. Total cook time was about 16-17 hrs for a 12lb but also had two small pork butts in their also. Few Questions after my first brisket moke.

I'm in the Southern California region besides smart & final where does everyone get their packers cut of brisket and what price per lb do we expect to pay?

Favorite rub and sauce to put on there anyone?

Burnt Ends worth making?

Thanks, btw the brisket was nice and juicy much better than some chain bbq restaurant's food but still room for improvement.

Good job K,

Can't speak to the where and how much. No favorite rub; it's different each time. This past Fri, I smoked a 11 pounder for chili. I just used salt, pepper, granulated onion and garlic. Still have some flat left over, but won't use a sauce. I foiled the last 2 hours and saved the juices. I'll reheat with that. Burnt ends? You bet they're worth it!!

We have whole packers at our local butcher shop @ $ 1.99/lb. Price Rite had them for $ 1.89/lb

Glad to hear that your brisket came out great. I usually buy my packers and Smart and Final. Sometimes they have only select in stock, other times, they have choice available. I usually try to pick out one that bends the most, while handling it, still in it's package. I did buy a packer at Ralph's once, on sale for 99 cents a pound. It was select cut, but, that one, turned out to be really good. Just got lucky on that cook. Any pics?

Nice job Perez. Everyone should get a trophy after finishing their first brisket. It seems to be one of those bbq hurdles. With brisket, I think less is more. Try the rub for the Midnite Brisket. Any non-sweet sauce will do (on the side, please), but why not try a roasted tomatillo salsa?

Burnt Ends are absolutely worth making, the last ones I cooked, after seperating from the flat, the went back for a total of about 24 hrs. It was some of the most tender meat I have ever tasted.

If not making your own rub, one of the best ones I have found is Rasta Joes out of Indiana. It is a great all purpose rub for just about anything. They only sell the small cans online but if you get to the Nugget Rib Cookoff in Reno on Labor Day weekend you can get a full 1 Gallon zip-lock for about $25. I usually go through about 2-3 bags a year.

Mine was 2.39/lb from smart n final for select cut but trying to find other outlets to buy meat, costco was 2.29 at one and 4.99 at another costco not even 20 miles away but the problem was they were both just the flat cut.
