1st cook with ceramic dish

ok I got the ceramic dish and doing my 1st over night cook with it. i have a brisket(6lb) and pork butt(5lb) on. ( put on at 3 this morning ) useing rancher charcoal. So far the temp is holding at 250*, going to bed now and when i wake up i hope to see the temp still at 250*

Ok, ok,got up and checked the temp on the WSM and, the temp was at 255*. not bad at all, vents open very little, I mean very little all most closed. if that would have been with kingford and water in pan I know my temps would have been way down under 200*.
Ok so for now I like the ceramic dish but one thing, I think i got the wrong size dish but heck it's working anyway.

The combo of Rancher and the ceramic dish makes for a great combo. Rock steady temps over long periods of time. I am a complete convert. And my Maverick ET-73 just arrived from Amazon!
 
I am a convert too. I cannot believe how that temp holds for so long. That is my method from now on! Wonder how it will do in the winter??
