Brock...I used the snake method on my performer. The temp fluctuated between 225-250. I used the 2-2-1 method as a base, but tweaked a little bit. I went 2.5 hours on the smoke directly - after 2 hours, I decided I wanted a little more color, so I let it go another 30 minutes. Then I foiled with apple juice and brown sugar for 2 hours. Then I finished it for about 45 minutes out of the foil lightly basting with sauce.
I used a couple chucks of apple wood too.
A little over 5 hours when it was all said and done.
