18 1/2 Smoker


 
I buy large briskets and figured out I need to cut in half so it will fit. My question is, should I put the Point on the lower grate and the flat on the upper or vice versa? My question is which burns hotter? Thank you in advance.

If you will be running water, the top will be hotter. If not running water, the lower will be hotter.
 
What size brisket? I've done a 14.5 pounder on my 18.5, and I'm pretty sure I could have gone bigger. If it were really too big to fit, I would just cut off the small end of the flat, and pull that small piece sooner. There is something magic about doing a full brisket.
