Bought a 11 pound brisket for an overnight cook. Used a drip pan with left over fat from the trim and it turned out well. I probably could have rested it a bit longer, but it turned out very well.
Only thing wrong with it is my teeth marks aren't in it Doing dino beef plate short ribs and brisket point Saturday. May also do a half pork shoulder or maybe I will do full pork butt and 2 slabs of plate ribs
