123A Beef Plate Ribs - Sunday Cook

My son was down for the weekend for Week 0 College Football kickoff.

I did up some 123A beef plate ribs from my favorite butcher on the WSM. Bowl in, no water.

7lbs after some delicate trimming - hefty!

KBB, post oak chunks, 250F target temp, SPOG rub, cooked to 208F and butter soft probe, rested for 2 hrs before slicing and serving.

Plated with grilled corn, baked beans, fresh Hawaiian rolls and potato salad.

Very happy with the results - I need a nap.
