12 hours for small brisket & picnic, thoughts?

Hello all!

This weekend is pretty hectic, but I decided I needed to put some meat on the smoker because darnit, it's father's day and daddy wants some meat! ;-)

I picked up a couple of small cuts at the butcher, a 6-lb brisket flat and a 4-lb picnic. They're all trimmed, rubbed, and ready to go.

This is my first time using such small cuts, and based on some other threads I'm planning to put them on at midnight to be ready for lunch at noon. If they're done early when I wake up at 7:30ish, I'll just foil them and put them in a cooler. Weather for tonight is clear, calm, about 60 degrees.

Consider this post a sanity check. Does this sound like a good plan, or a foolish one?

I think you'll be okay,but then again that's me.It takes me about 8hrs to do a 6#flat but we all know what they say,it's done when it's done..
 
With those sizes I would go 225 then bump the temp when you get up so they don't run the risk of overcooking.
 
Actually no, surprisingly.

I put them on shortly after midnight, both on the top rack. Smoker was just under 250 at the lid at the last check around 2:30am. Woke at 4:30am and saw that the smoker had climbed to 275 at the lid, so closed the vents. Brisket was already at 170!

Woke up again at 8:30am, smoker was around 220 at the lid and the pork was done (foiled and in the cooler). Brisket was still not tender and measured in the high 170s at various spots. Brought the smoker back up to 250 at the lid.

At 11:00am, brisket flat was tender in some places but not yet at the thickest part of the flat. Temps in the low 180s. Foiled it and opened up the vents, temps climbing now.

So it's looking like a full 12 hours on the 6-pound flat, albeit with some inconsistent temps in the wee hours of the morning.

I think I'll have it ready for lunch still.

Visited the bakery for fresh rolls this morning, and baking some jalapeno corn bread in the oven that smells great!
