Southern Cracker Pie
"Sometimes called "Mock Apple Pie", this Southern-inspired pie was first published in 1863 in the Confederate Receipt Book. (And yes, it's the "Receipt" book, not the "Recipe" book). It has been made through the years, reaching a peak when Ritz Crackers were introduced in 1934."
20 Ritz original flavor crackers
1/2 cup walnuts, chopped
3 egg whites
1 cup sugar
1 tsp. pure vanilla extract
1/2 tsp. baking powder
Whipped cream, for serving
Grated sweet chocolate, for serving
1. Preheat the barbecue to medium high 350 to 400F.
2. In a small bowl, crush the crackers coarsely. Add the walnuts and set aside.
3. In a medium bowl, beat the egg whites until stiff peaks form, gradually adding the sugar, vanilla and baking powder. Fold in the crackers and nuts, and fold this mixture into a pie plate.
4. Bake for 20 to 25 minutes. Remove the pie from the barbecue and let it cool.
5. Cover the top of the pie with whipped cream and sprinkle it with grated sweet chocolate. 6 servings
