Scottish Bubbles and Squeak

DH made these last night to go with the P.D.T's Sourpuss Lemon Chicken Marinade posted on the marinade forum. They were something really different and tasty. We enjoyed them very much. Hope you will also.

Scottish Bubbles and Squeak (makes 8)

1 lb. potatoes, peeled and cut into chunks
2 1/4 cups coleslaw mix
3/4 cup minced onion
1/2 cup shredded sharp cheddar cheese
1 TB coarse-grain mustard
1/2 tsp salt
1/2 tsp black pepper
1 TB vegetable oil

Bring potatoes and enough water to cover to a boil in a pot. Reduce heat to medium and simmer until tender, about 10 minutes. Drain and mash potatoes.

Meanwhile, stir together coleslaw mix and 1/2 cup water in a skillet over medium heat. Cook until tender, about 5 minutes. Drain thoroughly, then stir into mashed potatoes, along with onion, cheese, mustard, salt and pepper.

Form mixture into 8 patties. Heat oil in a large skillet over medium-high heat. Add patties; cook until crisp and golden brown, about 5 minutes per side.

Could also just use leftover mash and leftover veg chopped up (instead of making mash and buying slaw mix). I believe
that was the origin--using up leftovers.
 
Been there, done that. lol We were just happy to find something different for a change. "Scottish" version.
