Well, it's been a while since I've been here. When I first got started smoking, my daughter was 8 months old. She's 2.5 now and has a two month old brother. With things finally settled back down, it's time to get back to doing what I do best. Smoking meats and drinking beers on a Thursday morning.
Tomorrow is rib day for my 14.5" WSM. I've never done ribs before, so it should be a good experience to make a couple racks. With that, some questions:
- What's the best way to fit them? I was planning to cut them into smaller sections to make them fit more easily.
- Will the ribs on the lower cooking grate smoke faster than on the upper grate?
- I'm making spare ribs, not baby backs. Anything I should know that I might be missing?
- We put in a Trex deck at the end of 2016. Can I smoke on that? Or should I move the WSM onto the lawn?
