I can look at drawings all day and try to understand where different cuts come from. I found this video that, for me fully explains and shows with a real carcass just where all the cuts come from.
There is no blood or guts. It's filmed using a fully dry-aged half a steer.
It's an hour long but I found it very helpful in understanding how a cow is built (and hopefully will aid me when I get "larger than normal" cuts) that I can then separate into my desired cuts.
