Brisket Fajitas

Here's another mashup that is really tasty.

Did Al Pastor (pork) fajitas on Sunday, but was short on meat for next day leftovers.

Did brisket on Saturday that was a tad tough, but has been bathing in juices since then.

The fajita left overs were yellow, red, and green bell peppers, with sliced yellow onion and roma tomatoes grilled to softness on the grill with a drizzle of canola oil, and dashes of chipotle chili pepper and smoked paprika.

The left over brisket was diced into bits, sprinkled into a fresh flour tortilla, then the fajita veggies were layered on top and covered in shredded sharp cheddar cheese.

Nuked in the microwave for 50 seconds...some dribbles of hot tabasco sauce for kick, then rolled up for eating.

Bam - this came together for a really good meshing of bbq/mexican. Smokey beef flavors melding with spicy snap of the veggies, and the gooey goodness of the cheese.
