I think the answer is yes, but if i wanted to do lollipop chickens at a comp, could I trim or "lollipop" the drum sticks (i.e. cut/remove tendons, french the bones) the day/night before the comp and still pass meat inspection? I remember someone posted somewhere once something along the lines of "you can take away from the meat but you can't add to the meat prior to the comp".
 
YES, you can trim prior to meat inspection, you just can't season, brine/marinade or alter the meat from it's raw stage for KCBS competitions. The rules do not prohibit the use of "enhanced" meat, i.e. meat that has been injected with a solution from the processor that is clearly labeled on the product.
