SMOKED PORK DIP, page 200 (for leftover smoked pork):
Excellent. Makes about 3 cups. Very hearty and very filling; good for an hors d’oeuvres party. Plan on smaller portions for a pre-dinner appetizer. Consider making a small spoon available if using one large casserole, or heating in individual ramekins for a small group. At room temperature, after it firms up, it can be used to stuff celery sticks or quick-blanched snow peas. Would also be delicious in a sandwich bun; coleslaw optional.
Would I make it again? Absolutely.
Low Carb: Yes. Weight Watchers: Plan ahead.
