K Kevin Taylor TVWBB All-Star Jul 27, 2002 #2 I cook my chicken thighs for about 3 hours at a temp of 225?. Not sure what you mean by "thigh filets", but they may take less time. I don't cook wings on the WSM, prefer a hotter fire, so no help there. On the thighs, shoot for 180?.
