I just trimmed my first 6 slabs of pork spareribs. I fried up the skirts - insanely tasty. I'm smoking the ribs tomorrow for a family gathering. I have a big pack of rib tips. I am planning on using BRITU. I was planning on putting the slabs on the lower rack and putting the tips on the top.
