Cooking up 3 slabs tonight. Put them on around 5pm, hope to take them off around 10:30.
Weather was cold--mid 20's, which is not a problem. However, the wind is kicking up, so I dutifully made sure the vents facing the wind were closed. For some reason, I could not get the dome temp above 175, despite a "raging" fire below.
Then it dawned on me that my dome vent, where I hang my Polder probe, was facing the wind. I rotated the dome 90 degress and whooosh, temperature shot up to 217 in about 2 minutes. My guess, the wind was affecting the reading of the probe.
Anyway, keep this in mind on those windy day cooks
