    I used 1 full lit chimney on top of unlit coals and gave it plenty of air to get them all going... I did occasionally crack open vent if I saw the temp get close to 325 and they would fire back up. Tried to keep my temp right around 340.

    2.5 to 3 hours...Guess it will all depend on how consistent the temp is from 325 - 350. Good luck and have fun.

    Do not cover it while resting. I never basted it, checked the temp in 2.5 hours. Total cook time was just under 3 hours.

    :D My first on Turkey on 18" WSM - 12 Lb Frozen (Yes Frozen) - Brined overnight after thaw - Creole Rub - 325 -350 (Applewood & Hickory) - Results were spectacular!!! (Crispy Skin, Juicy and Tender) Can't Wait for Thanksgiving!!

    Newbie and 1st time using WSM - Product Pics

    Thanks to this forum for all of the insight and ideas fo rme to "PULL OFF" (Tender and falling off the bone) my first smoke. Baby Back Ribs were tremendous... 4 Hours @ 250 degrees. YUM!!

    First Time posting and First Time Smoking tomorrow on my new Xmas gift. 18.5 Smokey and cannot wait to fire up some Baby Back Ribs. Love the forum and all of the insight. I will definitely post pictures of my product. Cheers!
