3 racks of baby backs are on my new 18.5 WSM. My initial observations: 1) 25 F difference between the grill and the dome. 2) Temps are all over the place. I expected this, it's new :) Also, just a foiled empty water pan. I'll update with pics later.

I've enjoyed lurking for a while, and now I'm about to take the plunge. Look what the big brown truck of happiness left for me today! I plan on firing this bad boy up early Saturday morning, I can't wait :D
