    Queso

    Santa dropped off some new cast iron cookware this morning. I'm thinking about doing some smoked queso in the skillet for a first run. Any ideas? Thinking about doing it like in the croc pot but on the WSM. Wood suggestions? Merry Christmas

    Substitute for maple wood chunks?

    Planning on doing the maple glazed turkey from The Big Bob Gibson book. The recipe calls for hickory,oak, and maple. Problem is I cannot find maple chunks anywhere. Thoughts on substituting apple or cherry chunks for the maple chunks??? How many chunks of each do y'all suggest? I have a 22 WSM.
