Weber Genesis LX series vs regular

I'm actually asking myself the same questions to replace an old Genesis C. Had been reading up on a Napoleon model too. [gasp] I know, Weber forum... :D

    Brisket flat

I'd be interested in the cook details as well. I smoked a flat today, and it was drier than I would have preferred. The middle was OK (not great), but the ends were very dry. Smoker temp? Target temp? Foil at all?

    Crispy Breaded Grilled Wings

My wings are resting in the fridge, and plan on having them on the grates in about 2 hours. That should have them ready right about halftime - we can graze on some other goodies at the start of the game (just the wife, son and I). This will be the first smoke since Christmas day. Hopefully I...

    Crispy Breaded Grilled Wings

Well, they sure look good in the OP's pics, but I'm here to tell you that they don't turn out like that when you forget to put in the water pan. That's what happens with 30 degree temps, snow and 40-50 mph hour winds - I was obviously in a rush to get things together to get out of the cold...

    Crispy Breaded Grilled Wings

I was going to try this recipe on the WSM with full size chicken drumsticks. How much does anything think I'd have to extend the cook time vs. those listed for wings?

    Twin Cities BBQ accessories?

I got my WSM at Gertens in Inver Grove Heights. They have an OK selection, although I'd like more. And it's definitely not convenient for me West of Chaska. Both Sam's and Costco carry 2 bags of 21.6 lb Kingsford for $13.xx.

Labor Day Cook (I'm nervous) (Now with PICS)

I went to bed at 2:00 with the cooker at 235 (lid temp). Opened one vent a tad more on my way to the Sleep Number. Woke up at 5:00, and it was at 250. Just woke back up at 8:00 and rotated/basted/watered with the temp at 230 and internal at 164. Looking and smelling mighty good! (pics at WSM pics

Labor Day Cook (I'm nervous) (Now with PICS)

I've got a shoulder on for my first ever midnight smoke (and 4th smoke on the WSM). Put it on about 11:45. The temp hasn't budged from 235 for over an hour, so I'm to bed (2:00 am local). I hope to get up at about 7 to rotate and baste it. I'm so dang tired, but it will be worth it if this...

    Adding a cooking grate

You don't have a DVR to rewind and/or pause to take a closer look?

    Weber Blue

We love our blue Genesis C! It's had a heck of a lot of use over the years - I wouldn't mind upgrading to one of the new models with the doors on the bottom, etc. But having just gotten married, the funds aren't really in our favor right now for a new grill. Maybe our next Weber gas won't be...

Chris Lilly's Six-time World Championship Pork Shoulder injection and rub

All ingredients have been purchased, and an 8.4 lb shoulder is in the fridge. My fist long smoke is taking place at this moment with a brisket. I'm going to do the shoulder either tomorrow or Monday. Obviously time varies based on many conditions, but does the estimate of 1 1/2 hours per pound...

    Twin Cities BBQ accessories?

To anyone out there in the Twin Cities, where do you find your accessories and BBQ goods? I realize that Home Depot, Ace, etc have some stuff, but there has to be someplace with a bigger selection. Gertens has a decent selection, but it's unfortunately not very close to where I'm at. Someone had...

    Wind shield?

    Wind shield?

I realize calling this an "accessory" is a stretch, but I couldn't decide where else to put it... I just got a WSM (second use in progress), and it is sitting on our deck. What kind of ways have people used to block wind if necessary on a deck? We have the guard rails to tie to as necessary. I...
