    Cooking Space Help

I am cooking for my company party and have been asked to cook 2 butt's and 2 packer's. The average butt in my area is about 8 lbs. and the packers are typically 12 lbs. Any idea how to get all this on my WSM? I would appreciate any advice. Scott

Maverick ET-73 vs. Nu Temp NU-701

Used my new Maverick last night on an over night cook and it was great. I love the high/low temp settings and the alarm that goes with those settings was nice as I did not have to set the alarm clock by the bed. Most sleep I've ever had on an all nighter. Scott

I used this charcole in the WSM on Friday for some BB's and Saturday for a 12.5 lb. Brisket and loved it. I went back to HD and bought 10 more bags. I used it tonight in the Performer on steaks and chicken and again was very pleased.

I saw the same stuff at the Home Depot on sale for $2.99 and bought a bag for grins Thursday evening. I typically only use Kingsford but at $2.99 for 20 lbs. I thought it was worth a try. I smoked some BB's on Friday and a 12.5 lb. Brisket today and actually have some left in the bag. I was...

First Brisket on my new WSM

Hi All - I finally got my WSM and am doing a Brisket tomorrow. I have used an off-set smoker for years and have had success but always seemed to fight the fire and issues with temp control. I am smoking my first Brisket on my new WSM and had a question in regards to the water pan. I never...
