Local SF Bay Area Question on Meat

Joe Scalise Meats is definitely a great shop in Alameda. The original Kinders in the martinez/concord area is great too. The franchise shops are pretty bad though.

    Smoking under cover

You gotta be kidding me Tom. You have an entire room built in your backyard dedicated to smoking? That's just straight G. Totally awesome. You sir, are the man. Now I need some backyard space... Joe

Meat Loaf and Tri Tip from the week.

Made some tri tip and meat loaf earlier in the week. I got the tri tip down, very delicious. Smoked for an hour than reverse seared. Meat Loaf was great too, but my friend suggested using oat meal next time instead of bread crumbs. I might give it a go. Maple Brown Sugar oats sound really good...

High heat question?? (about the amount of smoke wood)

I never have done HH, but that seems like an extreme amount of excessive wood. I typically use 3 chucks. Maybe 4 or 5. But 9 seems like a whole lot. Just because you don't see the smoke doesn't mean the wood isnt doing it's job. In fact I (and many others) aim to hit that "blue smoke" where you...

    Pulled Beef question

Sorry, I don't mean to hijack the thread. But I wanted to ask a question to the people who've made chuck rolls before. I've been dieing to smoke one for months since someone here made that one original thread. But the rolls are always 15lb's or bigger. And I'm only feeding 3 people. So could I...

New to charcoal and need tips

I just tried the new 2010 version of Kingsford Blue Bag and I was shocked to see significantly less smoke during the start up. The old formula used to smoke out my entire patio area. The new formula was thinner and much more manageable (smoke wise) Joe

    Salsiccia alla griglia italiana!!

Food looks great! The italian could use a little work though. Too many verbs left in their original state with the "are" and "ere" endings. Hard language to learn. No harm no foul though. Joe

Again, thanks all for the good words. For all the Cali members, I noticed this week Safeway has a sale on Tri-Tip (untrimmed) for 2.97/lb. Can't really go wrong with that. And Dwayne, I cooked the packers as to people's instructions here. Traditionally low and slow, fat cap up. Cooked to 165...

Thanks for the kind words guys. Like I said, these are all cooks over the past few months. I hardly ever take pictures, which is really a crime. It's just either I always want to eat, or a bunch of friends are over. One thing is for sure though, after I lived in the dorms 3 years ago and hate to...

Hey, my names Joe. I'm 23 years old and reside in San Francisco. I actually got my 18" bullet back in August when it was on sale big time at amazon. So far I love it. I always used my grill for years, so I'm glad I dove into the world of smoking. But I've been leeching here since then, until...
