    Flavor in the water pan

    Sustained temperature drop after removing lid

    Yesterday while smoking chickens on the WSM, I removed the lid after three hours to check on chickens, potatoes and habeneros. Before removing the lid I was at 230, after putting the lid back on, I couldn't get above 200 until I added more lit charcoal. Is this normal? I did expect the...

    Questions about smoking habeneros

    This past weekend added a few habenero pods to the WSM as I smoked some chickens. I found that smoking them at 220-250 for six hours will make them brittle and perfect for breaking up into flakes. Can't wait for my habenero plants to start producing so I can more flakes and use them in rubs.

    Dan, I'm relatively new to smoking with the WSM. Using the method Chris describes to light charcoal does give you a long constant burn. Just checking the WSM every 30-45 minutes is plenty and adjusting the vents at the bottom is quick. Since my wife doesn't really understand whats involved...

    Questions about smoking habeneros

    Does anyone know how to smoke habenero peppers using the WSM? I would like to smoke the habenero peppers so that they are dry and can be broken into flakes or ground into powder. Is there any smoking cookbooks that might have this information? ------------------
