    Difference in temp on WSM racks?

    Kevin, Thanks for bringing that up. I haven't used a water pan for quite some time now. I use a foiled clay flowerpot base in place of the water pan and water. Sometimes I forget that when trying to help out.

    Chuck Roasts on Monday

    Thanks for the tips I may try them the next time I do chuck roasts!! These roasts were about 4 pounds each. Yes, the WSM is one Smokin' Machine!!! Cooking at -10*f is almost like cooking in the summer!! Didn't even need my jacket most of the time!!
