    ABT Omelet

Found Packer's cut brisket in Cincinnati for $1.99/lb. Flat was a little flat so I put it in the blender and mixed with cream cheese and JT's Rib rub. Made turds with Poblanos and Serranos. Next move is to slice these fine and put into some kind of omelet. Greg

My first attempt at smoked salmon

That is a great recipe. I made it the other night according to Chris' instructions and would definitely do again. Was going to post a photo, but you have that ground well covered. Good pictures!

    Mold

I scrubbed the mold off with an old sponge and flash sterilized the inside with a chimney of charcoal. Will try leaving the vents and door open.

    Mold

Brought the WSM up from the basement to try following Chris' Salmon brown sugar rub recipe. For the third time since I bought this one in about 2001, I found the cooking chamber and grill to be covered in mold. I'm pretty good about washing the grates and water pan, but haven't spent much time...

    Yakitori Wings

Sounds like they blackened up beautifully. I'll go to Jungle Jim's here in Cincinnati with your ingredients list. Should be brutally good. Thanks for the clarifications! Greg

    Yakitori Wings

Bro, Your recipe sounds awesome. You flip at 10m and then reapply the spice mix? I will have to try this and get back with you. Thanks for sharing, Greg Schaefer

Indian subcontinent style chicken with Cayenne peppers.

I got the big one circa 1997. It has been a good friend over the years. Back in the olden days, Lodge made you do the first seasoning. I think they sell them preseasoned now. I think all a person needs to do is get hot, wet, scrub with a scrubbie, and spray with PAM, or any similar...

Indian subcontinent style chicken with Cayenne peppers.

Get you a fire going with some mostly dead Oak chunks you sliced up with a Swede saw. Toss some charcoal on top to make you feel better. Fire in the hole. Wife cuts up a whole chicken and mixes up a package of Hyderabadi seasoning and yoghurt. Not the Tandoori mix, which is powerfully good...

    Smoked Green Tomatoes

We haven't had much in the way of summer here in Cincinnati. July was the coldest July in 150 years of recordkeeping. So I got me a stack of green tomatoes that would never much turn red. I fired up some hickory chunks, and some oak branch I sliced with the Swede saw. I smoked those...

Alder smoked tofu spaghetti with spicy sardines.

I found this recipe on another site, and modified it to use tofu, because that sounded amusing. (See http://j-walkblog.com/index.ph.../food_fast_and_easy/) Ingredients: [1] 1 drained container of extra firm tofu sliced into eighths. [2] six Thai chili peppers diced and ground in mortar and...

    Brining a salt-injected turkey.

Hello all, I have been brining enhanced chickens and turkeys for years with the Fat Man's Brine. It seems to give a very juicy and flavorful bird. On a side note, I did an experiment with one chicken brined in spices, and one with only brine, and could not tell the difference. It might be...

    JT's rib rub

This is not my recipe, but turns out excellent every time. 1 cup brown sugar 2 tbsp turbinado sugar* 1/2 cup sweet paprika 1 tbsp cracked black pepper 2 tbsp kosher salt 1 tbsp chili powder 1 tbsp cumin 1/2 tbsp garlic powder 1/2 tbsp onion powder 1 tsp mustard powder 1 tsp lemon pepper 1 tsp...

    Hot Wings/Buffalo Wings

I'll agree that frying is the best way to go. Brian's Belly has a good recipe: http://www.briansbelly.com/recipes/poultry/bellybuffalowings.shtml I've modified this a bit to the following: 1/4 cup Tobasco. 1/4 cup Frank's Red Hot. 1/4 Bulliard Louisiana Supreme. 1 tbsp Dave's Insanity. I skip...

    WSM grate diameter.

Hello all, Chris does such a great job here, I simply accepted as true his stated measurements of: 18 1/2" upper grate, 18" lower. (See http://www.virtualweberbullet.com/parts.html about paragraph 6). We went out and bought a 16" diameter pizza stone, and the wife was ready to mock me hard...

    Pulled pork enchilada.

Hello, I've made what passes for NC barbecue in our house using Fergy's sauce from the afb faq. A decent-sized smoked picnic or butt makes more sandwiches than we care to eat, so I tried the following to good reviews. 1) Preheat tortilla 15 seconds in microwave. 2) distribute 1/2 cup room...

flavor differences between different hickory species.

Hello, I started smoking this summer with the brinkmann model one step above the ECB. Bought my WSM in October, when Chris posted the reduced price. I've been using hickory chunks bought from Weber, and decided to see if there was any hickory wood to be found on my land. VA tech has a really...
