    Yea I tried to use a generic chimney but I just couldn't figure it out. The kingsford I used wasn't instant light. So it was only just a little instant light left over from grilling. I'll try the chimney again next time.

    Assembled my wsm this morning and followed the BRITU method of time. I used corkys rub instead. Also I couldn't find wood chunks so I used 3 handfuls of apple wood chips soaked and 1 handful of hickory wood chips soaked, adding them every hour or so. I had trouble keeping the temp at 225. It...

    really? cool. I hate to let a good piece of meat go to waste. I noticed you are from North Alabama. Isnt that the way Dreamland's ribs are? (not cut)

    Ive noticed that some people say to just use the extra meat in spaghetti, but I dont want it. Is it ok to just leave it on and not cut it off?
