    Fat up/Fat down #*%!

    Doing my 1st brisket 1/2 flat 6 lbs. tonight. I plan on doing 2 7lbs. pork butt on top rack. Since this is 1st brisket thought I would put it fat side down and let butts drip down on it. Or should I go fat side up as I hear most people say? Everyone have a great weekend.

    best meatloaf sandwich?

    Wood?

    There was a post some time back that said not to use wild cherry wood. I have been give a whole truck load of wild cherry wood to burn in my wood burner. Does wild cherry wood have to strong a smoke for smoking purposes. Thanks for the info.

    Butts/Chickens

    I plan to smoke 2 seven lbs boston butts and two beer can chickens this Sat. Plan to be smoking by 9am. Plan to put butts on top grate and chickens on bottom.     Another question?

    Should I or should I not burn up any left over coals or wood? Can I not save what does not burn up during smoke? I use to do this with old weber kettle grill. Thanks
