    Am I a rookie again?!...

It's been so long since I've done a pork butt on my WSM, I may be considered a rookie again.. I am doing 2 pork butts on my WSM on Tuesday (my 39th birthday, what better way to celebrate). I am planning on arising around 3:30AM and starting my cook to be done in time for dinner. I am planning...

    Lump Charcoal Convert

I am a Kingsford user as well. You can get incredible bargains at Costco sometimes, depending on stock. I think I paid $10 for 2 20lb. bags shrink wrapped together. Never need to worry about temps much, either (thanks, Jim Minion!)

    DrSarcasmo's Favorite Jerk Sauce Recipe

Awesome, did you put the jerk sauce on right from the start, or later in the cook?

    Cleaning Survey

Here's a question: How thoroughly do you clean your WSM after each use, and what method? I definitely clean my grates, dump ash and clean water pan, but does anyone scrub the inside of the WSM? Just curious how everyone does it. Ken

Has anyone tried this recipe on baby backs? Having a party soon and looking for BB rib alternatives.... Ken

    J-Lo cook

J-Lo is also one of my favorite butts too (next to my wife's -- same heritage!). Glad you like your WSM, stick to the butt for pulled pork. You might try going to Costco for the butts, they are usually pretty cheap, about a buck a pound. Cheers!

What are you cooking for the 4th?

SUCCESS!! my 3 racks of baby backs and 2 beer can chickens were a major hit. I have now been recruited to smoke ribs at my brother in laws Christmas Eve bash. How can I maximize the amount of ribs I can fit on my WSM? Man, I love that cooker!!! Cheers

What are you cooking for the 4th?

Originally planned on 3 racks of baby backs and 2 pork butts on the WSM. Went to Costco this morning, no pork butts. SO..... I am making the BB ribs plus 2 beer can chickens, one with BBQ rub and one with Jamaican Jerk. Have a happy, safe 4th and God Bless America. Ken

    Cooking on gas

I LOVE my Weber gas grill. Nothing easier than throwing some boneless breasts or burgers, etc. on that bad boy, especially during the week when time is an issue. Very convenient to keep a nice steady temp, too when I don't fell like messing with charcoal. I can honestly say I get good usage...

    1st timer Super Bowl BBQ

Forget the advice, what time does the party start? First, nice choice on the WSM -- that is the favorite of my 3 grills. I have not yet done a brisket, but seems you will need more time OR foil it. I am sure others will advise on that. Sounds like a really tasty menu, I have made beer...

My Sunday fun with Fat Butts....

Jim: How much/what type of smoke do you use for the breasts? I would love to smoke some chicken breasts for the family. Last time I did a turkey breast, it was way too smokey. BTW, do you brine the chicken breasts? Thanks for all your help.

    Two butts results

Dee: The Minion method is awesome for any lenghty cooks. There is absolutely no difference in flavor, and my WSM stays between 235 - 260 (lid) for 14+ hours with very few adjustments.

My Sunday fun with Fat Butts....

Like you said in another post, the more you cook, the more you learn. I need to trim the fat off those bad boys. Costco, BTW also had Kingsford Charcoal -- 48 lbs for $9.99. I was euphoric, especially when the supermarket has them at $7.99 for a 20lb. bag!!

My Sunday fun with Fat Butts....

OK, so I decided to try 2 pork butts (.95/lb at Costco, I love that place) in the traditional manner. Up at 4:30 am, piled my charcoal ring, lit up a chimney and dumped them over the coals. Put one butt on the lower grate (with Polder probe) and one up top. Smokin' away, man is that WSM...
