    Spring is here

    It was 85 degrees here last week. I would be alright if it stayed a little cooler for a while. But life is good. Can't complain too much.

    Rib help needed

    I've done a couple hot and fast rib cooks but always loin backs. But I'd be down to try a spare. Anyway, to keep it different Id go with a zaatar spice blend. Oregano, marjoram, thyme, etc... Google it and check it out. I've found it to be awesome on pork. Good luck.

    So it was done at about 1130. Pulled off and in the cambro til I started pulling it at 430. For just a basic season salt and pepper rub. It came out really nice.
