    Mod Materials Opinions

Hey all, haven't posted in a while but I would like some opinions: I am going to pick up a Smoke Daddy and affix it to my smoker cart. I plan on running some sort of tubing from the SD to the manifold for my iQue to use the WSM as a cold smoker. The question is what sort of tubing do you all...

    Cart for my 22.5" WSM

I ran out and shot some pics of the cart empty as well as a couple of different angles. The center section can be removed, but you have to rotate it about 15 degrees so the latch will clear the crossbar. I don't have a cover, but I keep it in the garage, so it's not an issue. My Webers are in...

Bourbon-Dried Cherry Stuffed, Bacon Wrapped Pork Loin

Sorry, Louis the Activa is what you want to wear gloves for. It's not necessary but it does tend to make your hands awfully sticky. And thanks for the invite. the missus and I always said that if we hit the lottery we'd learn French and retire to Quebec. We're not holding our breath, though...

Bourbon-Dried Cherry Stuffed, Bacon Wrapped Pork Loin

Louis, make sure you wear gloves and try not to breathe it in. It's not poison, but it does react with protein... Also, just noticed where you are from. My wife and I honeymooned there. What a beautiful part of the world.

Corn on the Cob (your method)

Corn, in husk, on grill. Once it's tender when I squeeze it it comes off the grill. I let it it sit for a few minutes then I remove the husks. The silk comes off pretty easily at that point. Then it gets butter and kosher salt.

    First Butts Not So Good

For picking up pork butts and brisket I use a pair of insulated neoprene gloves I bought at a restaurant supply store. Your hands are the perfect tools for picking up and removing larger cuts like butts and brisket from the smoker. To clean them I just wear them to the kitchen sink and scrub...

Bourbon-Dried Cherry Stuffed, Bacon Wrapped Pork Loin

Thank you for the kind comments. This started out as something I was messing with for pork tenderloins then I decided to try it with a boneless loin. I started the stuffing by sweating finely diced onion in butter then added a little garlic. After that came the dried cherries and some golden...

    Mayday! Mayday!

That can't be right. The catch shouldn't be higher than the door. And since the door is taller than the opening on the center barrel it should still catch.

    Thermapen cleaning?

A mixture of 50 parts per million of household bleach to water will sanitze your thermometer (and other food contact surfaces) As will wiping it down with vinegar or alcohol. I haven't checked the price of Thermowoks probe wipes, but I'd wager you could find an alcohol wipe cheaper that either...

Anybody use a Smoke Daddy Cold Smoker?

Troy, that looks pretty slick. As for the vertical mount I was planning on fixing it somehow on the cart I made. Take a look and see what you think. 22.5 WSM Cart

    Mayday! Mayday!

I had similar problems. Initially when I removed the knob I dropped and lost the wavy washer that goes on the outside of the door. That was causing problems, but also it is very easy to over tighten the screw and strip out the little brass insert in the actual knob. I called Weber and got a new...

Anybody use a Smoke Daddy Cold Smoker?

I am considering a Smoke Daddy as well. I have an iQue 101 and since I won't be running it during cold smokes I thought I might just run a tube to the manifold for the iQue. Thoughts?

    Cart for my 22.5" WSM

Andy, use away! It's pretty straightforward but if you have any questions feel free to ask. Tom, not sure, I haven't tried yet. I doubt it, though. The cart is a bit longer than the Performer.
