    Here's a salmon recipe

Thanks! I like that this recipe doesn't leave the salty rub on for a lengthy period of time. That was one of the several mistakes I made the first time around.

    Start Stock or Modded

Until I bought a WSM 18.5 recently, I'd never smoked anything. I have cooked only two things so far: babyback ribs and salmon. The unmodified WSM maintained the temps I wanted with only very minimal bottom vent fiddling. I used the standard Minion method and full water pan both times. I'd...

    Pepper grinder ?

The Cole & Mason is by far the best pepper grinder I've ever used. And I've had a bunch. It is a conventional grinder, but you can grind a lot of pepper with it fairly quickly. LINK

    Here's a salmon recipe

Cooked it today with three small chunks of apple. Standard Minion method. I averaged 205 degrees for 1.5 hours total cook time. It was a total failure. The salmon was much too dry, much too salty and a bit too smoky. But my new WSM 18.5 was amazing, maintaining 200-215 deg. F the entire time...

    Here's a salmon recipe

Thanks, Joan. Any recipe with bourbon can't be too bad. ;)

    Here's a salmon recipe

Thanks, Jim. I have a bag of apple chunks, so I can do it like I did the babybacks, with 2 or 3 chunks and maintain temp at 200-225 for 1.5 hours. I worry a little bit about the salmon falling apart taking it off the grate. Using oil as you suggested should help with that. I don't know why it...

    Here's a salmon recipe

Many thanks to all for your excellent advice and encouraging words. I'm going to hot smoke a salmon as my second effort as soon as I can find a really fresh fillet. What do you say about THIS recipe and how best to adapt it for WSM?

Never smoked anything in my life...

I kinda like the idea of doing the salmon next. Make wife happy and it only takes about 2 hours.

Never smoked anything in my life...

Sorry, despite my attempts to edit to correct times, some of the times still an hour off. My camera doesn't know we're on daylight savings time.

Never smoked anything in my life...

I could go for that. But my wife wants a smoked salmon next. And the WSM was a gift from her, so maybe I should do that. :sneaky:

    Best replacement thermometer

After my very first smoke I noticed condensation in the standard Weber lid thermometer. Not good.

Brisket may be the next thing. I have no clue. Any hints would be most welcome.

Never smoked anything in my life...

So true. The brief wasn't one of my best efforts. But I did it as a favor at no charge. So how good did it have to be? ;)

Never smoked anything in my life...

Yup, trying to do two entirely unrelated things at the same time isn't a good idea. Multitasking is an overrated skill.
