    Picnic: Skin off or on?

    For pulled pork, I normally get picnic roasts. They're cheaper, is the main reason. I've both removed the cover, and left it on. If I leave it on I slice underneath it and put rub under there. I honestly can't tell much difference in the results.

    that rub recipe is my go to for everything. I do cut the pepper down because my gf doesn't care for that much spice. I usually do 1/4 c for a x4 batch. But honestly, if you have 15 lbs of pulled pork and it's in a crock pot or some such, that heat should be distributed pretty evenly.

    Great. Typed out a response, and now it's gone. Weird. I have foiled and not foiled my pizza pan. I will foil from now on, as it does make for easier cleanup. My foil isn't wide enough to cover the water pan, so if the seam leaks a little it's not a big deal as it just goes into the pizza pan...

    A possibility I hadn't really entertained is to just to take it [I]there[I] and cook it. Granted, I wouldn't have my enclosure so wind etc would be less than ideal, but that idea doesn't sound half bad.

    It's an hour and a half away. For a dinner time meal that's what I would do, but I'm not so keen on getting up at 5am to fire up the smoker.

    first time poster, long time lurker. I bought two turkeys after thanksgiving and threw em in the freezer. Cheap food is good food! I offered to smoke turkey for the gf's family easter gathering. No big deal, I've done turkeys before. But they traditionally buy it precooked and dump gravy on it...
