Brisket Safe? Sell by date was 2/14/20

Have a brisket with a "sell by date" of 2/14/20. It has been in the fridge since then in cryo and was purchased from Kroger. Planning to smoke today, should it still be safe? Smelled fine and wasnt slimey.

Cooking Brisket Flat and Point Separately

I purchased a cryo'd brisket about a week or so ago and froze it, and have since thawed it and it is in the fridge. I bought it with the intention to make dry cured pastrami (want to cure for 7 days) but failed to thoroughly read the recipe that says to only use the flat of the brisket. I do not...

    Brisket Question (Weather related)

So I screwed up. Bought brisket rubbed it down and had everything set up for my first overnight smoke. I forgot to check the weather and right after I put the brisket on my wife runs out and tells me its supposed to pour over night and I have no protection for wind and rain for the smoker. Long...

Deep freeze shut down, did I lose the meat?

Long story short, ice built up on walls of deep freeze and it shut down, 1 pack of Ribs totally thawed, 1 pork shoulder thawed but I had 3 packer briskets, the flat totally thawed at the thinner part but was still semi-frozen near the point. All meat is in original cryo-vac plastic. Smaller...

I'm addicted. First smoke ever today.

As another post or 2 have stated I decided to spend my labor day learning a new skill. I went ahead and did the BRITU ribs recipe and I fell in love at first bite (pardon my crappy jokes) took a tad longer than I anticipated but I suspect it was because my ribs were a little over 2lbs each and...

Can I get by with the stock thermometer or should I just upgrade.

So will the weber thermometer work or should I just take the plunge and get something more accurate? If so what should I get? It seems like a lot of people are less than satisfied with the stock thermometer.

First smoke is going to be BRITU ribs. Quick question.

Should the membrane always be removed? If so, is it easiest to remove at room temp or when the ribs are still cold. Shooting to do my first smoke Monday. Went to Costco and bought 2 packs (6 slabs) today , fingers crossed 😎

    Hello from Ohio!

Hello all, I have been cooking on a Weber kettle for 4-5 years now and love it and was going to try and tackle smoking on the kettle but after doing some extensive reading it seems that smoking a brisket on a kettle may require me to sit at the kettle all day, as much fun as that sounds I...
