    WAL-MART Beef....

Yeah, my wife and I had a couple of the USDA Choice ribeye steaks from there last week. They were excellent! If not the best I've ever had, they were darn close.

    Burnt Ends from leftover Brisket?

Last time I cooked a brisket the eatin' volunteers ended up eating all of the sliced flat and a portion of the point that I had kind of chopped/cubed. Well I vacuum packed and froze what was left of the point that was mostly cubed. I was thinking of trying to make some burnt ends out of the...

New 22.5 One Touch Silver for $39!

Thanks Wal-Mart!! After eating grilled and smoked BBQ at my house for years my FIL decided he wanted a grill to use at home. Well my MIL said he wanted one of those $39 charcoal grills from Wal-Mart (Char-Broil). I had already decided to buy the $79 18.5 Weber anyways. When we stopped by the...

    Access Door...

Just slightly over bend the top of the door for a good fit. Start at one top corner and start bending gently in towards the other top corner holding the top edge between your palms and fingers. Move across the top edge bending little by little every inch or so until you get to the other top...

    Friday is Tri-day

Excellent Cook Jim! Love the idea of dipping the buns in the juices. Gonna have to try that next time. BTW, I grew up in Hickory County Missouri. My Family still lives there. That smoke wood is great. Use it all the time. It's even sold in Wal-Mart around here.

    what am i doing wrong.....

I too dump the coals from the chimney when the flames are licking the top coals. I use the propane assist on my performer, but only for about five minutes or less when I see that the lower coals are starting to glow red. No sense in wasting the propane after that. As far as the charcoal...

About to pull the trigger on a DigiQ DX

When I started using my WSM, I decided early on that I didn't want to babysit the smoker on an all nighter so I decided that I needed an ATC. My desired features on the ATC were: 1. The ability to control the pit temp (obviously) 2. and monitor the pit and food temp from inside my house...

    What's your favorite coffee maker?

+1 My FIL works on Bunn equipment and swears by them as do many restaurants. The Phase Brew makes a great cup of coffee that I've found superior to the plastic brewers that have to be replaced every other year. I love being able to program it and wake up to the smell of fresh coffee as well...

Plastic Milk Jugs, gotta love 'em!

Plastic Milk Jugs, gotta love 'em!

Wow, Great ideas for milk jugs! Bob, this might be a silly question, but wouldn't it have been easier to just dump out the water? That's what I did when I had that problem once but I have plenty of places to dump it without making an eyesore of my yard. Maybe your situation is different.

Can't seem to get the reverse seer method down...

That's a pretty bold statement on a highly controversial subject. I would have to disagree somewhat though. Maybe I shouldn't have used the term "lock in". I do believe that if you sear a steak first and cook it to let's say medium while cooking another steak over indirect heat without searing...

Can't seem to get the reverse seer method down...

Bob, I don't like the reverse sear method nor do I understand the concept. IMO, you sear the meat to lock in the juices and get some nice caramelized grill marks. That's why it's done in the beginning. Personally, I light up the grill with one side for direct and the other side for indirect...

    Propping the door open?

The method of drilling/installing bolts on the door is a great idea, but I used the same principle with a couple of self tapping sheet metal screws. Just quicker with the same results. I did drill a small pilot hole where I wanted them though. Great Idea!
